Grilled Shrimp with Tropical Fruit Salsa

Ingredients

  • 2 lb SEA PORT raw peeled & deveined shrimp
  • 4 Tbsp olive oil
  • 2 cloves fresh garlic (minced)
  • Salt and pepper to taste


Tropical Fruit Salsa

  • 2 ripe avocados
  • 1 cup diced papaya
  • 1 cup diced managos
  • ¼ cup fresh cilantro (chopped)
  • ¼ cup finely chopped red onion
  • 1 serrano chili (seeded & finely chopped)
  • 1 clove fresh garlic (minced)
  • Juice of 2 limes or to taste
  • Salt and pepper to taste endive for garnish

Directions

Marinate shrimp: In large bowl conbine olive oil, garlic. Add shrimp and marinate for 2 to 4 hrs.
Salsa: Gently toss all ingredients. After mixing salsa, chill for 30 minutes.
Grill: Remove shrimp from marinade. Grill over medium heat 3 to 5 minutes per side.
To Serve: Place 3 or 4 Grilled Shrimp on a small plate and top with fruit salsa. Garnish each plate with 2 or 3 endive leaves.
