1) Combine 3 tablespoons honey, two tablespoons red wine, 1 tablespoon Worcestershire, 1 tablespoon ground coriander, 1 teaspoon ground cumin, 1/2 teaspoon ground black pepper and salt to taste.
2) Marinate 4 Escolar 6/up steaks for 2 to 4 hours, then grill in indirect heat (with lid closed) about 20 minutes or until opaque.
